Fried fish and mango dressing |

Ingredients
1 whole fish
¼ cup (150g.) peeled mango, finely shredded
¼ cup peanuts, roasted
3 tbsp shallots, thinly sliced
4 cups vegetable oil
Seasoning
2 tbsp fish sauce
3 tbsp sugar
2 tbsp lemon juice
1 tbsp chilies, finely chopped
Instruction
- Slice the fish along the belly. Clean and rinse thoroughly. Score the fish by making a few diagonal slashes on each side. Deep fry the fish in hot oil until golden brown.
- Mix the seasoning in a small bowl, add mango, peanuts and shallots.
- Transfer the fish to a serving plate. When served, the seasoning mixture may be poured on top of the fish or served separately.
