Ingredients
500 g prawn
500 g Pork mince
200 g Pork fat
200 g truffle mince
1 egg white
1 tbsp. tapioca flour
1 ½ tbsp. soy sauce (Shiitake)
½ tsp. salt
1 tsp. pepper
2 tbsp. sesame oil
1 tsp. Chinese rump
Wonton wrapper
Crap meat (optional)
1 egg yolk + ½ tsp. sesame oil heat in microwave 15 minutes
Black vinegar (for dipping only)

Preparation
1. Clean and mince prawn meat, mince pork fat properly and mix with pork mince properly in a big bowl.

2. To mix the stuff: Add egg white mix it properly. Then, add tapioca flour and mix properly. Next, add all mixtures and knead it properly by hit it in the big bowl. (You can taste it by take a bit of them and heat in microwave. Then, you can add more seasoning.) After that, put the mixture in refrigerator until very cold (not frozen).

3. To wrap: put a bit of stuff on middle of wonton wrapper and wrap it as the pictures. Next, fill up the stuff and toping with cooked egg yolk and crap meat.

4. Coat tray of steaming pot with vegetable oil and put the dumpling on the tray and steam them with boiled water about 5 minutes.

5. Garnish with coriander leaf and serve with black vinegar.
