Glass Noodles Salad |

Ingredients
2 cups short length of scalded glass noodles
1/2 cup thin slices of boiled pork minced
1/2 cup thin slices of grilled prawn
1/4 cup crisp fried dried shrimp
1/2 cup spring shallots, cut into short lengths
1 lettuce plant
1/4 cup 1-inch lengths of Chinese Celery (optional)
1/4 cup pea nut
1 tomato
Thinly sliced red spur chilies for garnishing
Ingredients for the dressing
3 hot chilies
1 tsp. thinly sliced bulb of pickled garlic
1 tbsp. thinly sliced coriander root
1/3 cup sugar
1 tsp. salt, 1/3 cup vinegar
Ground the coriander root, pickled garlic, and chilies well in a mortar. Place the mixture in a pot, add the vinegar, sugar and salt and heat. When the mixture is boiled, remove from the heat and let it cool.
Preparation
- Mix the noodles, pork, prawn, spring shallot, and celery. Add the dressing and toss gently.
- Place the salad on the bed of lettuce and sprinkle with the fried dried shrimp.
